Hi Kids! I hope you are all healthy and staying busy! Last week I flew back to California to be with my family. Right now I am in quarantine for 14 days in Kings Beach, a town near Lake Tahoe. During the day I read, snowshoe, and cook. I hope you all keep sending recipes to the English blog—I need some new ideas of foods to make!
I miss you all a lot, take care!

Rachel

Mini cheese cakes recipe:

Crust Ingredients:
1&1/4 cup graham cracker crumbs (I crushed sweet digestive cookies from El Corte Inglés, which worked just as well)
3 Tablespoons brown sugar
5 tablespoons melted unsalted butter

Cheesecake Filling Ingredients:
8 ounces (or 225 grams) cream cheese
1/4 cup white sugar
1/4 cup sour cream (or plain Greek yogurt)
1 egg
1 teaspoon vanilla extract

Instructions:
Preheat oven to 350F (175C). Line a 12-cup muffin pan with muffin liners. In order to make the crust, stir together the graham cracker crumbs, brown sugar, and melted butter. Distribute the mixture evenly into each muffin liner and press to compact.
Next, it’s time to make the filling. Mix the cream cheese with a mixer or by hand until smooth and fluffy. Mix in the sour cream. Then add in the egg, sugar, and vanilla. For best results use ingredients that are at room temperature.
Distribute the filling into each liner. Bake for 16-20 minutes. Cool completely and refrigerate.
Mini cheesecakes can be served plain or topped with jam or berries.
Optional: add 1 tablespoon of cocoa powder to the filling to make chocolate cheesecake.

Suggestions for Young Learners: Writing a letter for a friend about your confinement...!!!

Dear students,
How are you? I hope that you and your family are fine. Hopefully, this situation will be over soon and you may see your friends soon. In the meantime, I´d like to suggest you an activity: Could you write a letter to a friend telling him or her about your experience during your confinement?
Next, I am going to post some useful links about verbs, adjectives and conjunctions, you may need for your letter. They include puzzles, scrambled games, make up word game online and the hang man game, so that you can learn or review them easily by playing.
This is an activity for Grade 5 and Grade 6. Also to any student who is interested in learning about writing letters. I challenge Grade 4 to write the letter as well...!!! You can do it too..!!!
Please, send me your letters to my email as soon as you can, so that I can correct them.
Take care.
Best.
Ana.

Steps to write a letter to a friend:

First, your address should be written on the upper right of the page, with the date beneath it.

Then, we can greet saying: "Dear..., " "Hello...." "Hi..."

Next, we can write the first paragraph. You can say.."Thank you for your letter" or "How are you?. I hope you are fine".

In the second paragraph, you can explain your experience during your confinement. Talk about the situation. What are you doing?

In the third paragraph, You can ask him or her about their experience or any other question like: what are you doing? What did you do?

Later on, you can use any of these expressions:
"I look forward to hearing back from you".
"Hope to see you soon."
"Keep in touch."

Finally, we can say:
"Best wishes".
or
"Sincerely".
or
"Love"
or
"Regard"

And we write our name, right at the end...!!!
